Goat Cheese and Prosciutto Pockets with Pear Fig Jam

10 Thin Slices of Prosciutto
20 Teaspoons of Goat Cheese
1/3 Cup of A Perfect Pear –Pear Fig Jam
1 Teaspoon Freshly Ground Black Pepper
20 Fresh Chives, About 5 Inches Long (Each)
Sliced Baguette, Toasted
Sliced Fresh Pear Wedges, Garnish



Preheat Oven to 275 Degrees – Serves 5

Slice each piece of prosciutto vertically so that you have a total of 20 pieces (about 3 x 5 inches each). In the center of each piece place a teaspoon of goat cheese and a scant teaspoon of A Perfect Pear –Pear Fig Jam. Sprinkle with freshly ground pepper before tying each piece of prosciutto together in the center above the filling. Use fresh chives to tie.

Place filled and assembled “pockets” on a baking sheet and heat in the oven for 5- 6 minutes until just heated through. Serve immediately while warm with a thinly-sliced and toasted baquette. Garnish platter with sliced pear wedges. Allow four pockets per person.
